Rainbow Cookie

Nothing says happiness like a beautiful rainbow! St. Patrick’s day is around the corner so, I thought I would make something special for the littles.  Besides colorful fruit, cream cheese and sugar brings a smile to anyone’s face.  This recipe can be as easy as you would like to make it. I made the sugar cookie dough but, you can buy pre-made dough. Another shortcut you can use is to purchase the pre-cut mixed fruit instead of purchasing each fruit individually.

Rainbow Cookie

Ingredients

  • 3 Cups Sugar Cookie Dough (your favorite homemade recipe or pre-made)
  • 2 x 8oz Cream Cheese
  • 2 TBS Sugar
  • 1 TBS Milk
  • 1/2 Cup Strawberries
  • 1/2 Cup Clementines (about 2)
  • 1/2 Cup Pineapples
  • 1/2 of a Granny Smith Apple
  • 2/3 Cup Blueberries
  • 2/3 Cup Purple Grapes

Directions

Step 1: Sprinkle flour on the mat/table and roll the sugar cookie dough out with your hands into a log.

Step 2: Take a rolling pin and roll the dough to form a flat rainbow and place the formed rainbow in a 350 degree oven for 20 minutes. * using a pizza pan is easiest for baking

Step 3: While the cookie is baking, add the cream cheese, sugar and milk into the mixer and whip until smooth.

Step 4: Spread icing across the top of the cookie covering any cracks during baking. The icing also helps the fruit stick and keeps the cookie from getting soggy.

Step 5: Now comes the fun part- decorating! Arrange the fruit into a beautiful rainbow. I found that the apples made it easier to keep the colors uniform and straight.
