Do you have a favorite summer treat that you can’t wait to enjoy after a hot day? For me, it is ice cream! Let’s face it, it could be a cold, snowy day and I would still want ice cream!
Since today is the 1st official day of summer, I thought I would share a recipe for Strawberry Coconut Ice Cream. This recipe is dairy free and is sweetened with honey, rather than sugar. If you are Vegan, agave could definitely be subbed for the honey. This recipe so simple, delicious, and will be sure to satisfy any sweet tooth!
Dairy Free Strawberry Coconut Ice Cream
- 12oz frozen, organic strawberries
- 1 cup canned coconut milk*
- 1 tablespoon honey
- 3/4 teaspoon vanilla extract
*I recommend full-fat coconut milk for an even creamier texture.
Combine all ingredients in a food processor or blender. Blend until smooth and creamy. Enjoy!
Note: If you have leftovers, I recommend using it to make popsicles. The leftovers aren’t quite as creamy, but would make perfect ice pops!
